Hotel Utah banquet menus printed on six white individual pages printed in black font. The first page of the menu has the hotel logo printed at the top of the page. There is a handwritten note that shows this is an "excellent example." This page describes the banquet options for a choice of five breakfast dishes and a breakfast buffet. The second page of the menu gives a choice of eleven dishes or the choice of a lunch buffet. The third page of the menu gives a choice of eleven dinner dishes or the choice of a dinner buffet. The fourth page of the menu is a list of hors d'oeuvres and refreshments with the menu items and prices listed per person. The fifth page of the menu is a layout of the banquet rooms that are in the hotel. Menu items range from eggs Florentine, to baked ham, to roast leg of lamb, to breast of chicken "cordon bleu" to Cornish game hen, to Swedish meatballs, and quiche Lorraine.
